Usually the strong black-and-white tonal statements are made using large areas of subtle modulation to create the effect. Cloudless skies through red or orange filters. Out-of-focus things. Waves at the beach through a ten-stop ND filter for thirty minutes at dusk.
But this one does it by using large amounts of random crisp detail. That's really hard to do, I think. This has a very strong sense of presence.
What really helped were the roses had been sitting without water for a few days and had started to dry but hadn't turned brown, that seemed to bring out additional texture -
