I've avoided the older cameras out of fears they use some funky old holders and that current holders won't fit. When did 8x10 cameras start using current holders? I know with 4x5 Graflax was still using an older non-standard holder quite late. Do I need to worry or will current holders fit anything?

The plot thickens with regard to my 11x14" saga. It seems my camera was made between 1890 and 1899, and ANSI standard dates to 1918, so there's your answer.

Is that the earliest that they could have been used? Or did the Ansi standards just codified what was already common? Graflax supposedly still offered it's older style back up to the 1950's. Almost bought one of the SLRs but decided the combination of the holder issues and the min focal lens of 190mm was too much of a tradeoff.

I guess I should just stick to something from the 1960's or newer but the more choices the better.

Hmmm.... I would suspect the ANSI standard was based on something already common, because it wouldn't make sense to invent a standard that didn't already exist in the marketplace.
