Seal professional dry mount press

Could someone tell me the difference between a Seal Professional 210 dry mount press and a Seal /Biengang 210M. I am a high school teacher and need to get one for the classroom so it needs to be pretty sturdy.

I have an M-X which is the 18x22" version. I think the difference has to do with temp control I have an old alligator eyes which was just a knob (like those blasted tacking irons) but the new one (and maybe exclusively the "M") has the knob and a temp gauge. Btw, the knob can be twisted all over so beware to double-check knob reading with temp gauge reading every now and then.
