Hi,

If I buy a Nikon D850, set it to monochrome and tether to my computer, will it appear on the screen as monochrome or color?

If it appears monochrome on the rear screen it should look the same on the monitor. I would think you would get more flexibilty in tone response to just shoot in raw and convert later with whatever balance of channels you desire and go mono. Get pan, ortho or blue sensitive film appearance. What would be the purpose of your proposed setup?

I want to photograph clients, head and shoulders. Then send the chosen file to Digital Silver Imaging to print, black and white. I don't want the client to ever see color.
