Probably a G-Claron in a near-normal focal length would be a good place to start. Not exactly bottom of the price barrel, but certainly a good value and a a good performer. Otherwise, any used multicoated plasmats like a 300mm Symmar- or Sironar-series would be good. If you want to go cheaper, an uncoated Series III Dagor might be a consideration.
Tripods: Cheap and good is a Majestic, usually $150 - 200 for a decent one on eBay; get a "black" one as parts are still available versus the "gray" ones. A Berlebach of the right size would be a consideration, as would several of the used metal studio tripods, or a large Gitzo metal. No point in going ultra lightweight with a metal studio camera. Majestic is hard to beat for the value.
I don't have much advice on a dark cloth; there are plenty of good choices in 4x5, but less in 8x10. The best thing would probably get someone to make you one. Conventional ones seem to be a bit heavy, but if you're using a Cambo 8x10 rail and a Majestic, the dark cloth is the least of your weight worries.
