C41 Bleach time with diluted Bleach?

We have some nice Tasmanian blue cheeses, very salty.

I like very strong flavours in cheese, as long as it's not bitter and too salty, I prefer sweet or nutty

I don't remember the pH of Bleach III, but the old bleach was about 6.5.

In any event, the pH is adjusted with Ammonium Hydroxide or Acetic Acid. Both can be had or made up to equal concentrations. I would use the 28% NH4OH and 28% HOAC for this to get to the right value for the bleach you are using.

I posted some formulas here for the original bleach. You can use either of the two methods.

Hi PE, I justo gor into this discusisone and your suggestion seems interesting. Do you mean stop the dev with acetic acid and then bleach straight will keep bleach PH OK? No rinse after stop bath? many thansk

Do you mean Stilton Cheese? The genuine product only made in a small area of England within about a 5 mile radius of the village of Stilton in Cambridge. If it is made elsewhere, it is illegal in UK to call it Stilton Cheese.

A 'stilson' in UK, is a large adjustable wrench much used in the plumbing trade and heavy engineering!

PE, please, just another question: if I have a Bleach (Fuji Hunt that says dilute 50% (half water half bleach) with water fro 6.30 min , can I dilute less (e.g: 75% bleach 25%water) to shorten the beach time? does make sense? or I have to stick with dilutions and time?many thansk

Use the manufacturers recommendations. I have not tried this bleach and therefore I can make no other suggestion.
