    Hasselblad 203FE and metered prism

Across the bottom of the screen is a list of EV numbers and the EV is the one that is lit. The meter is self contained. No information is transmitted to the camera. One reads the EV and sets the EV on the lens. It was designed before the 200 and 2000 series.

Do you guys think this is too dark or just right

I too think it is a great portrait. The only thing that might bother you is that the whites are not pure white, but what I see is just right.

Pondering the unthinkable (selling my Mamiya 7)

I agree that you need to sell the Mamiya 7 and buy a Hasselblad instead. The Hasselblad price will only get higher if you wait.

Easygoing color film for casual return to 135 color?

Yes, much less than the gas your would use to drive back there to get it. If you do not like that develop it yourself, sent up a darkroom in your bathroom and use your enlarger to make the prints.

Manual flash calculations with accounting existing light

Yes, I use it that way all the time. The sensor cuts off the flash when it has seen enough light from the scene and the flash. That is how I use it with my Hasselblad. RTFM. The Hasselblad has its TTL system which reads the light off the film but I do not have that strobe system.
